Hey everybody! Welcome to the first blog post of seasonal and seasoned. We will be featuring a monthly recipe with items that are in season and can be picked up from the LaFarm or Easton Farmers Market. Here’s a quick guide of seasonal fruits and vegetables for the month of October. It’s important to shop seasonal in order to support local farmers, preserve the environment and it’s good for your health! A win-win for everyone.

The featured vegetable for this month is butternut squash! It’s a winter squash that’s easy to cook, small and has a sweet, nutty flesh. In this recipe we will be baking butternut squash as a dessert by roasting butternut with some maple syrup and cinnamon. The method to prepare these will be quick and easy. 

The ingredients you will need are:

▶Butternut squash 

▶Butter or oil

▶Maple syrup 

▶Cinnamon, nutmeg, salt or any other seasonings of your choice

  1. First things first preheat your oven to 450 degrees F.
  2. Wash the squash, cut off the stems and cut it in half lengthwise. Use a spoon to scoop out the seeds and strings. You can roast the seeds or discard them. Set the squash cut-side-up on a baking sheet.
  3. Time to season! Place some butter or oil in the center of each squash. Drizzle some maple syrup (or brown sugar) into each one. You can also feel free to sprinkle salt, black pepper and cinnamon.
  4. Bake until the squash is very tender when pierced with a knife or fork. The time will vary and range from 35 to 45 minutes.
  5. Remove from oven and serve.
